Chantel's Lil Dairy Banana Pudding
I'm very intentional about reducing dairy in my family's diet. Since we have eczema, dairy can trigger flare-ups and isn't great for our sensitive skin. Additionally, dairy can sometimes contribute to body odor, so I avoid it whenever possible to keep our skin healthy and our family feeling fresh. I stumbled upon this dairy-free banana pudding recipe by accident and loved it so much I had to share! The only dairy ingredient here is in the Nilla wafers, but the pudding itself is made with creamy coconut and oat milk. It's absolutely delicious!

 

Chantel's delicious recipe for her Lil Dairy Banana Pudding 

Ingredients:
- 2 boxes of  5.1oz Vanilla Instant Pudding
- 1 1/2 cups cold coconut milk
- 1 1/2 cups cold oat milk
- 2 small bananas, sliced
- Nilla Wafers
- Coconut whip (Optional)

Instructions:

1. Prepare the Pudding:
   - In a large bowl, whisk together the vanilla instant pudding mix with the cold coconut milk and cold oat milk until smooth and thickened. This should take about 2-3 minutes. Let it sit for a couple of minutes to fully set. Optional: Whisk in 1 cup of Coconut whip to make pudding fluffier

2. Layer the Pudding:
   - In a serving dish or individual cups, start with a layer of Nilla Wafers at the bottom.
   - Add a layer of sliced bananas over the wafers.
   - Spoon a layer of the prepared pudding over the bananas.
   - Repeat the layers (Nilla Wafers, bananas, pudding) until you run out of ingredients, ending with wafers. 

3. Chill:
   - Cover the dish and refrigerate for at least 2-3 hours to allow the flavors to meld and the pudding to set properly.

4. Top and Serve:
   - Before serving, add a dollop of coconut whip on top of each serving. You can also add a few Nilla Wafers or banana slices for garnish.
