I’m always looking for ways to fuel my busy days with something as delicious as it is nutritious—and let me tell you, my Sweet Potato Chia Pudding is IT! Not only does it taste amazing, but it's packed with good-for-you ingredients that'll leave you feeling energized and ready to conquer the day.
This recipe is one of my go-to’s because it's simple, quick, and perfect for prepping ahead. Plus, my kids love it too, which is a win in my book!
Ingredients:
- 1/2 cup chia seeds
- 2 cups coconut milk
- 1 small cooked sweet potato, mashed
- 1 tsp vanilla extract
- 1/2 tsp cinnamon
- 1/4 tsp nutmeg
- Pinch of salt
- Sweetener of choice (maple syrup, honey, or agave), optional
Instructions:
- Prepare the Sweet Potato
If you haven’t already, bake or steam the sweet potato until soft, then peel and mash it until smooth.
- Mix the Ingredients
In a large bowl, combine the coconut milk, mashed sweet potato, vanilla extract, cinnamon, nutmeg, and a pinch of salt. Stir well until smooth and creamy. You can also use a blender to fully incorporate the sweet potato for a smoother texture.
Taste and add sweetener if desired.
- Add the Chia Seeds
Stir in the chia seeds, making sure they are evenly distributed throughout the mixture.
- Let it Set
Cover the bowl and refrigerate for at least 4 hours, or overnight. The chia seeds will absorb the liquid and thicken the mixture into a pudding-like consistency.
- Serve
Once set, give it a good stir, then serve in bowls. You can top it with fruit, nuts, or a sprinkle of cinnamon if you like.
